Healing Turmeric Vegetable Soup

This soup is not to be missed. Not only is it delicious, but it is comforting and healing. I love the soup with vegetables and also the broth on its own is just right on a cooler, maybe snowy day. 

You all know me well by now, I select ingredients with love but I don’t measure, just a dash here and a dash there! 

Here’s the recipe:

  • 6-7 chopped carrots, depending on how much you are making
  • 1/2 of a white onion
  • 7-8 stalks chopped celery
  • 2 chopped zucchinis
  • 1/2 ginger cut into small chunks
  • parsley
  • mushrooms, if you desire 
  • dino kale (add this in a little later), I used about 1/2 a bag
  • turmeric
  • diced garlic
  • salt and pepper
  • water

First, let the carrots, onion and celery cook. Then, add the zucchini, mushrooms, turmeric, garlic and ginger. Last, add the parsley and kale. Cook all of these vegetables together for about 20 minutes. Then, add the water over the vegetable for the broth. Let the soup cook for 1 hour.

Delicious! I enjoy it for dinner, and even as a mid-day snack. Plus, the broth is just right for sipping.
